Depends on the project...when realism is key, then the old adage of thinking of how players are sitting on stage...but when the project allows you to be more creative, I like to think sometimes in "pop-rock" standards, panning violins 1 and 2 left and right, percussion and bass right in the center or automate from left and right (or vice versa) timpani rolls or Harp arpeggios , etc.
