Well, start looking at the mixers you admire, and see if they have sit-ins available, and see if they take assistants. You already did the Remote intern thing, so you know the demands from the music side (hopefully you sat in with Alan, and others!) And if you made a good impression there, maybe you could see if you can use those connections to get into some of the production houses that have in-house sound teams. Good luck!
