I think it depends on what you like to do. If I speak for myself: I'm a creative thinker, more of a director. Right now I'm producing a short movie and sometimes I think: this is crap. If you like to arrange and settle things, of course it's worth it. Go for it. Everyone needs people like you.
If you have something marketable to produce. The question to ask is, do you wish to produce your own projects, or to hire out as a production company for other people? These are two entirely different goals and entirely different business models.
Consider starting an LLC just for the project. That way you are still starting the business but you are under no obligation to keep it going after the completion of the project.

But my question is more specific related to Italy, because is working in different way, somehow.
Anyway, I have an idea in mind about the business, but I don't mind if the project is mine or belongs to others.
