I have a relatively short acting resume (2 plays, 1 featured extra role, some commercial work). I'm currently working as a stand in for an A-list actress. Can (or should I) list that on my resume?
I wouldn't list it. I've heard casting directors say not to. They're more impressed with stuff you needed to audition for. for someone with not much experience i'd puff it up with training and special skills. If you play any instruments, play sports list that on there. If you have training list that and definately list the 2 plays and commercials.

when you say stand in are you body doubling? if that is the case then I'd do what Dan suggested
I have heard that putting "stand in" on a resume is a bad idea. It's really not necessary to do it.
